Briefly, the Conference is all about reviving local wheat cultivation, wood burning ovens and traditional baking. Here at Maine Wood Heat, we’re founding partners in the event and we provide several Le Panyol wood fired ovens for the country’s best bakers to use in workshops. Next year (2009) Dan Wing, author of “The Bread Builders”–the seminal book on the history of wood burning ovens and the establishment of the artisan baking movement in the U.S.–will be a featured presenter at the Kneading Conference.
